With a big construction team on site the revamped Green Dragon looks set for a mid-April opening. Around Wellington was given an exclusive preview of work at the historic South St inn.
One discovery during renovations is a large previously bricked-up cellar that is being turned into a downstairs lounge. With the additional space the Dragon expects to seat up to 60 customers.
An entire new bar has been given a traditional oaken look by re-cycling old bedheads from the former bedrooms. Thirteen new letting rooms all with ensuite bathrooms are being constructed in the skittle alley.
“Real ales and upmarket cider and lager are going to be an important part of our offering,” said regional manager Andy Purkiss. “We’re not going to be taking on Wetherspoons at their own game of promoting cheap drinks.
“All of our food will be cooked here at the Green Dragon, not off-site, and the head chef is also one of the managers. I imagine main meals will start at about £8.95 but that is really up to the local team.”
